Recently i been re-reading the regulation regarding diabetes, and noticed that in "AMC1 MED.B.025 Metabolic and endocrine systems (G)" there is no limitation to persons who use insulin, which means for at-least my self T1D patient using insulin, i can get class 1 medical, as there is no limitation?
Or i am missing something very major here?

Unfortunately, yes.

The AMC doesn't mention insulin because the actual rule does:

MED.B.025(b) Diabetes mellitus
(1) Applicants with diabetes mellitus requiring insulin shall be assessed as unfit.
(2) Applicants with diabetes mellitus not requiring insulin shall be assessed as unfit unless it can be demonstrated that blood sugar control has been achieved and is stable.

Ireland runs a "pilot" program for diabetic pilots. You will need an Irish Licence and possibly an "EI" registered airplane but we have many type 1 diabetic pilots flying in Ireland. I am a Flight Examiner previously approved to conduct flight examinations in accordance with the diabetic protocol in Ireland.

The applicant must demonstrate the ability to operate the aircraft safely while carrying out the required blood checks according to the protocol.
